Today, I Screwed Up the Rice (A Life Interrupted)

My mother was a fabulous cook. She had this amazing way of making something truly delicious out of nothing at all. Looking back, she would have been a great contestant on The Food Network show, “Chopped.” You know the one where they give you a mismatched basket of food items and ask you to miraculously make something amazing out of it in 15 minutes flat. She was that good. One of my favorite memories of her cooking was just how much she could do with eggs. She could make them a million ways and they were always BOMB—and if she had cheese and tortillas—lookout because you were about to meet your new favorite dish. Breakfast for dinner was an absolute treat as a kid. She was creative, innovative, and basically a food magician. I miss this about her.

I’m not really a cook. I mean, I do cook, but I’m definitely not on her level. I am a baker though. We complemented each other this way. She would make my favorite dish when I would visit home (tostadas) and I would make oatmeal chocolate chip cookies or apple pie. In those moments, all was right with the world. And while I don’t consider myself a great cook, most of what I know, she taught me.

When my son was still a baby she showed me how to make Mexican rice. Sean loved to eat it, it was soft, fluffy, and flavorful. I can remember the first lesson in my kitchen and the subsequent lessons in her kitchen as she helped me perfect it. Mom cooked according to looks and taste, I, however, needed a mathematical formula. Through a series of trials and errors, I finally figured it out. Using an equation (yes, I am a nerd), I can figure out how to make any amount of Mexican rice needed to feed any size group. You can call it a gift…but mostly it’s a nerd thing.

After my Mom passed away, life was a blur. Daily chores were neglected, my mind foggy, I felt extremely lost. I’m sure I was exhausted in every sense of the word—mentally, physically, emotionally, spiritually…you name it. And yet, people needed to eat. It was probably three weeks later when I finally got around to cooking something “real.” I decided on tacos, a dish I was certain I could make in my sleep, and of course an accompanying pan of Mexican rice. Every part of the process was agonizing. Each ingredient a tangible reminder of the mother/daughter and teacher/student relationship we had when it came to food. I immediately went to my Mexican rice math equation, but there was nothing. After almost two decades of memorization, my reliable recipe (formula) escaped me. I stood there looking at an empty pan, uncooked rice in hand and I couldn’t remember step one. Nothing, then tears.

I remember thinking, please, Lord, don’t let me forget this! I need to know how to do this. I can’t lose this. I’ve already lost too much. Please, help me to remember.

Here is the part where you might expect a sudden revelation. I hate to tell you this, but there was none. I tried. I cried. I screwed up the rice. Not only that, but I screwed it up the next time and the time after that. Time and time again I stood there, dumbfounded and lost. In the big scheme of things, forgetting how to make Mexican rice doesn’t seem like a disaster and yet it was. It all was. The pandemic, losing my Mom, coping, and trying to move on. It was all a disaster. The kids ate variations of crunchy, under seasoned, too wet, blah tasting Mexican rice…encouraging me all the way. I can remember my daughter, Casey, saying, “You’ll figure it out. Go slow.” These are phrases that I often say to my kids when they’re struggling and being hard on themselves. Hearing these words directed at me stopped me in my tracks. When a child repeats something you have frequently (or incessantly) told them it’s a parenting compliment, a parenting win. Honestly, though, I think it’s just called the circle of life.

I remember the frustration of learning new things as a child. Somethings came naturally, but for me, cooking wasn’t intuitive. My Mom was always gracious in her teaching. I went to college only knowing how to make cereal and grilled cheese, but through her guidance (and many telephone calls) learned to make so much more! I went through my Rachel Ray phase about the same time the internet and smartphones became a part of daily living enabling me to share my mealtime creations with just a click. I remember a phone conversation where she walked me through making a rue. I was terribly unsuccessful. We tried an in-person lesson on my next visit home. Still unsuccessful. It probably took me five years to learn, all the while she would say, “You’ll figure it out. Go Slow.” Yes, definitely, the circle of life.

You might be surprised to know that cooking wasn’t my Mom’s favorite thing. Talented as she was, and I’m convinced food was one of her love languages, she did it for us and for others lucky enough to be at her kitchen table. And, she always made it fun! I come from a large family, so preparing meals for gatherings was time-consuming. No matter, we all just piled into the kitchen and got to work. Mom was great at delegating tasks according to our abilities. This makes me laugh because most of my expertise was in chopping vegetables while my sister, Amanda, was in charge of more complicated (and delicious) menu items that required actual cooking and seasoning. All the granddaughters would get involved —assembly-line style—for enchiladas (a family favorite!) No one ever complained as being a part of Mom’s kitchen crew meant lots of taste testing and samples. A huge perk to the process! By far, the biggest win for me personally was the day my Mom complimented me on my Mexican rice. I carry those words around like a badge of honor, then and now.

So when I failed to remember how to make the Mexican rice, it felt like I was losing something special. In true resolute fashion, I refused to give up. With my Mom’s words in my head, I kept trying. Shortly after she passed I came across a social media post that said, “Be the things you love about the people who are gone.” I saved it on my phone, a poignant reminder on the hardest days. I’m not a cook. I don’t believe I’ve been gifted with that ability, but for my family, cooking and time in the kitchen were so much more than that. I believe my Mom cooked because she loved us and it kept us close. The kitchen was always the center of our home life growing up. The heart of the home, it’s still one of the rooms I spend the most time in, my kids, too.

It’s been more than four months now, and I’m not screwing up the rice anymore. I finally remembered the recipe (formula) and hope that I’m never in a place to forget it again as part of my Mother’s memory lives in the kitchen. She’s in every drawer as she has gifted me with a number of utensils and tools. She lives in the cupboard and the refrigerator as she has influenced the things I love to eat and feed my family. She lives on the countertop, her whiteboard taking up center stage on the kitchen island. And she’s certainly in my cookbook as I try to maintain the recipes and traditions that I’ve grown up with and pass them on to my own children.

May I be all the good things that I love about her…today and every day.

Parents’ Guide to the ULTIMATE 80s Summer (Your Kids Will Thank You)

So, I’m thinking about putting my current mommy neuroticism on hold for just a bit and going with the flow this summer.  Way?  WAY!  You see I was totally inspired (that’s “totes” inspired for you millennials) the other day by this clever blog about creating a ’70s style summer for ours kids.  While I could absolutely relate to the writer’s top 10, the bulk of my childhood actually took place in the 80s…complete with jams, jelly shoes, Hypercolor t-shirts, mix-tapes and some of the best movies/television EVER!  Thinking about that place in time brings back memories of super rad summers…chillin’ with choice family and friends, no grody schedules bringing us down,  livin’ it up with totally tubular fashion, and maxing out with non-stop gnarly fun 🙂  Back then we turned our nose up at bogus rules and wigged out parents that just didn’t understand the 80s way of life.  Dudes and dudettes, the 80s were BOSS and wouldn’t it be totally righteous of me to share those good times with my kiddos?  Agreed?  Cool beans.

Here’s my take on the ULTIMATE 80s summer.  Grab your shades, fetch your fingerless gloves, style that hair sky-high…and prepare for AWESOME.  It’s going to be a tripendicular good time…major.

  • Wear what you want…how you want.  Have you seen some of the styles from the 80s?  Hideous, sure, but fun and unique every time.  I don’t remember my folks saying, “cover up” or “that’s too revealing” because in the 80s it was about funky layers and mismatched everything.  So Mom didn’t do laundry last night?  Whatever, kid…you’re living in the 80s now and your faded gym shorts look good with that yellow button down shirt…just remember to pair it with your converse sneakers and a backwards ball cap.  K-RAD.
  • Watch TV…a lot of TV…actually the same shows over and over.  Back in the day nothing new came out in the summer on television.  It was rerun city, baby, and I LOVED IT!  I didn’t mind hitting the couch, remote in hand and settling in for rerun episodes of Three’s Company, The Facts of Life and Family Ties.  So you’re replaying them during the show’s regular time slot?  Still must see TV for me!  Get hooked on my mom’s soap operas…there’s nothing else on, why not?  HBO is showing Sixteen Candles for the third time today?  I’m glued anyway.  While I’m not on board with letting my kids get hooked on soaps, I see no harm in letting them binge watch some retro goodies like Boy Meets World, The Sandlot and Goonies.  Excellent!
  • Drink Kool-Aid ALL DAY and eat your weight in Popsicles.  They always tell you to stay hydrated…especially in the heat of summer.  I know it sounds like a lot of sugar (and it is,) but that doesn’t mean anything to the 80s kid.  Orange Kool-Aid (same color and “flavor” as juice) was perfectly acceptable at breakfast with a bowl of cereal and toast.  The punch version was a staple at every birthday party I ever attended.  Lemonade Kool-Aid was just as good as fresh-squeezed and PINK lemonade Kool-Aid was the beverage of choice for the uppity, preppie set.  When you’re not sucking down this sugar-water, head on over to the freezer for a frozen treat.  Popsicles are inexpensive and unless you want to risk brain freeze, they can kill a lot of time.  Hands down…there is nothing like working on a grape popsicle while sitting on your front porch during a scorching hot, summer day, my friends.  Go ahead, kiddos, enjoy (to the max!)
  • Sunglasses are a must…even indoors and ESPECIALLY at night.  That’s right.  Wear your shades, like all the time!  Your specs speak volumes about who you are and what you stand for…sporty, goofy, cool and if you can pull off the flip-up sunglasses look…all the better!  The coolest kids I knew during childhood had a pair for every day of the week (probably mallrats.)  So come on kiddos, grab your plastic eyewear of choice and get your spec-tacular summer started.
  • Baseball and sunflower seeds.  This pretty much sums up my existence during my childhood summers.  This duo provided evening entertainment as well as a pseudo dinnertime meal.  In the 80s we didn’t have all the fancy flavors they do now…we ate our salted sunflower seeds until our lips were swollen and we lost all feeling in our tongue.  When we were done…we begged for more!  This vicious cycle is never so appealing as when we’re camped out at the baseball diamond.  Sure, you have those who prefer peanuts siting in the stands, but nothing really fills a hole (or maybe burns one in your throat) quite like sunflowers seeds.  Bonus points on your 80s summer if you can score some Astro Pops at the ball park (those bad boys look soooo much cooler than they taste!)

  • Stargazing…oh, yeah.  I can’t remember if we borrowed the telescope or if it was just handed down to us, but either way we were the luckiest kids on the block (even if we didn’t really know how to use the silly thing!)  We spent countless nights outside on our back porch just checking out the moon and trying to spot planets among the stars.  We looked for constellations and laid flat on the picnic table in our yard to take in all the night sky’s wonders.  It was peaceful and totally stellar at the same time.  Come on kids, put down your technology and open your eyes to something so much better!  Shooting stars and meteor showers are just as mind-blowing today as they were in the 80s.
  • Brush up on your gaming skills, dude.  No, I’m not talking about video games…I’m talking about real games…as in the type you gather around a table to play!  Growing up in the 80s we took our games pretty seriously.  Bragging rights were always at stake, occasionally money was involved, and sometimes a stupid dare was the prize.  Either way, we played to win.  All night Monopoly games, vicious games of Sorry and Battleship, and my favorite–card games.  Nothing says summer like a knock down game of Spoons!  This is definitely on my list for this summer.  My kiddos need to learn this throw back game and maybe even how to throw a few elbows in the process…I said we play to win, remember.
  • Fun…on the cheap, duh.  Ahhh, yes…the 80s were a good decade for America.  As kids, most of us didn’t know that we were average middle class and that was okay.  We didn’t expect new cars, designer clothes or the latest gadget.  We were content with simple things and made the most of our days with basic, cheap fun.  For example, we grew up without Supersoakers and Nerf water guns.  The sprinkler and the garden hose provided all the fun we needed.  Water balloon ambushing an unsuspecting friend walking into the backyard was good for a million laughs.  I can remember neighborhood water wars…and when our rinky-dink water guns weren’t enough to win the battle we repurposed 2 liter soda bottles to soak each other to the bone.  Make-shift water games and activities are the absolute best…and my kiddos have already started creating their own water fun with friends this summer.  No pool required.  For added inexpensive fun, check out free zoos (yes, they do exist,) state parks and road side attractions.  You have not lived until you’ve had your photo taken with an extreme size, concrete animal or the world’s largest something or other!  Homebodies can make a whole mess of fun with a good, old-fashioned watermelon feed…complete with seed-spitting contest.  Go ahead, invite the neighbors.
  • Summer music playlist…for sure.  In the 80s, a mix-tape took time and skill…and usually involved a pretty hip friend.  Getting the hook-up on the latest songs sometimes meant that you had to listen to the radio and quickly hit the record button when your favorite jam came on.  I remember countless tapes where I missed the first few beats of a song, you could hear the commercials or maybe even a little of the the DJ talking (pretty amateurish, I now, but whatevs.)  I also remember the awesome feeling that came with getting a “real” mix tape, where 5385cee5557560322982989a1b9ee844someone with an elaborate music collection or DJ skills put together only the best.  Rockin’ out in your bedroom with your boom box full blast…there’s nothing quite like it.  A close second would be toolin’ around town with your Walkman in tow.  Poolside fun requires just the right set of jams, too!  When we were old enough to cruise Main Street the perfect mix tape could make or break the night.  Today’s kiddos love music just as much and here’s where their technology could actually come in handy.  With the swipe of a finger, kids can create their own, FREE summer music playlists or tap into ready-made lists on music streaming services like Spotify, Amazon Prime Music or Pandora.  It amazes me just how much 80s music they already know thanks to pop culture, but the best part is when I pull up the old music videos for them to see with their own eyes!  Thank you, YouTube.  Let’s just say it’s good for a lot of laughs 🙂

So take a chill pill and relax.  After all, savoring summer isn’t privy to just one decade.  We can all take part in this bodacious ride!  Summertime is where we write some of our best stories.  It’s where we create many of our favorite memories and cement those relationships we will always treasure.  This is where best friends are made, family road trips take place, where crushes and first loves are experienced and we collectively have a chance to breathe and reset.  Take in the warm temperatures, go places you’ve never been, laugh a lot and when you run out of things to do–start the list all over.  The rules are different in the summer…and the 80s rules…well they just RULE!  Parents, say hello to what just might be your best summer yet.    Totally (to the max.)

A Case for Kitchen Walls (My Rally Cry Against Open Concept)

When I was a kid I remember telling my Mom all about my dream house.  I mean, if Barbie could have a dream house…surely I could, too.  In my simplistic, imaginary abode there would be few rooms (less to clean,) one room completely without furniture (reserved exclusively for me,) and absolutely NO KITCHEN.  “How will you eat?” she asked, “Where will you prepare your food?”  Okay, Mom, I didn’t have it all worked out.  I always thought food was overrated anyway, but in a pinch I figured a microwave and a mini refrigerator would bail me out.  Eventually, I developed a love for baking and thus a kitchen became a necessary evil in my small mind, but it still didn’t make me an overall fan of the kitchen.  In fact at that point, I started championing the idea of paper everything.  Paper plates, paper cups, disposable silverware, etc.  I even spoke of inventing paper pots and pans (I was a tween at this point and HATED doing the dishes!)  Finally, as a young adult preparing my own meals in a “one-butt” kitchen, I gave up on the idea of the “kitchen-free” home.

Fast forward many years (and many kitchens later,) and I practically double over laughing at myself for these crazy anti-kitchen ideas.  Especially now that I claim the kitchen as my favorite room in the whole house.  No, it’s not because I somehow became a master chef (we all know that didn’t happen.)  The reality is that no one in my home seems to really enjoy being in the kitchen. For our family, the kitchen is for doing homework afterschool and grabbing the occasional meal together.  This means that I basically have this room all to myself, ALL THE TIME.  As an introvert…this qualifies as my own little inner sactum.  And I like it that way.  So when everybody on HGTV demands open concept, I’m the one screaming at the television, “DON’T DO IT!”  Keep your walls, people.  Whatever you do, keep your walls!!!

Obviously, no one is listening to me.  Kitchen remodels are underway as we speak and the people are clamoring for the open concept.  Apparently, we’re all hosting large dinner parties and get-togethers thus making the need for a life without walls mandatory.  I believe the folks on HGTV call this ideal for “entertaining” and everyone on the planet is doing this but me!  Look, I’ve had the open concept kitchen before.  It meant that I was subject to watch/listen to whatever the person in the “family” part of the room had on the television.  It meant no private phone calls.  It meant constant interruptions.  If I wanted to take in a little talk radio or music (as I am prone to do,) I had to do so via ear buds which meant I couldn’t hear my kiddos (this is imperative as everyone knows that the best time to act up is when mom is out of earshot.)  The open concept was also problematic whenever company decided to drop by unexpectedly (as is apt to happen in a parsonage.)  Oh yes…on HGTV the kitchen portion of the open concept is always spotless.  In real life, however, the kitchen is a constant work in progress.  I don’t know about you, but a pile of dishes in the background quickly negates any inclination toward hospitality.  I just remember feeling so self-conscious.  I know, real friends don’t judge…but come on, it’s a little weird to have your breakfast leftovers hanging out for all to see.  Then there’s the smell.  Okay, we all burn the bacon every once in a while, but sitting down on your couch and catching a whiff of it in the fabric of your decorative pillows hours later is just not worth it.  And since I’m laying out my case, have you ever noticed that food travels just a little easier in the open concept home?  Toddlers suddenly believe that mac and cheese is good at the kitchen table, but even better on the living room floor.  Uuugggghhhh.

kitchenI could go on and on about the pitfalls of the open concept, but what really inspires me are all the perks of having a “real” kitchen (complete with WALLS.)  This is my space.  I control the lighting, the radio, and the level of activity in this room.  I can quickly whip something up for dinner or I can methodically (and slowly) try out a new recipe with the level of concentration a less-than-great cook requires.  I can spread out without the risk of someone “observing” and judging the madness.  I can multi-task and take my time cleaning up (or better yet, I can just walk away.)  Like a dictator, I can make sure food doesn’t wander out of this space.  While kitchen smells always migrate, I am less likely to catch a whiff of “Taco Tuesday” in the couch cushions on Wednesday morning.  Still, my all time favorite argument in defense of kitchen walls is that I can dance.  A lot.  I can blast New Kids on the Block, George Strait, or my non-stop Christmas music and jitterbug, two-step and let loose to my heart’s delight.  It’s at times like these that walls make all the difference.

I’m no interior designer (and no one is asking,) but I have a feeling that the open concept is here to stay.  As much as I love HGTV, I am fully aware of the more/bigger/better/different agenda that permeates our culture and homes.  Still, I will not be deterred.  Say it loud, say it proud…I AM ALL FOR WALLS…because if cooking is good for the soul, then the sanctity of the kitchen must be a personal heaven.

Christmas Trilogy, Episode 1: THOSE Christmas Aprons

Sometimes I think that we open some of our very best Christmas presents long before the big day arrives.  For me, there’s something special about unpacking all the Christmas décor, ornaments, and trinkets that I’ve collected through the years.  Every December we lug the boxes upstairs and like little kids open each with a sense of excitement–kind of like running in to an old friend or finding something that was once lost.  My kids (even as a tween and teen) exclaim, “Remember this!” Or they’ll question me, “Why did you save that?” and “How long has this been in the family?”  One of the things that touches my heart most are the tales behind these treasured keepsakes which leads me to my favorite comment, “Tell me the story about this one!”  Then I get to share the story behind baby ornaments, school crafts from days gone by, or the Hallmark Yoda figurine that adorns the tree every year.  It was actually this ornament (and all the hub bub about the recently released Star Wars movie) that led me to write this post as I chronicle three of my favorite Spencer Family Christmas stories.

Let me begin with the FACT that my mother-in-law is far more popular than I could ever hope to be.  I think even complete strangers would nominate her homecoming queen should we ever find ourselves in high school again (despite the fact that we graduated in different decades and states!)  From hello, people just love her.  Actually, you don’t even have to speak to her to like her…I’ve witnessed countless strangers ask her for directions, information, and just start chatting with her without any prompting whatsoever.  She just has one of those faces that says, “Let’s be lifelong friends.”  It’s a rare gift (my husband has the same one,) and I just can’t help but sit back and marvel.  This sort of thing comes in handy when you shop at Hobby Lobby…or at least that’s what I’ve concluded whenever Karen is around.  And Hobby Lobby is the scene for this Christmas memory.

My daughter Casey was just a little, bitty thing at the time…probably 3 or 4ish.  She didn’t mind sitting in shopping carts especially if grandma was “driving.”  While I can’t recall why we went into Hobby Lobby that day (although I don’t think one has to have a specific reason for going into Hobby Lobby because who doesn’t LOVE that store?)  There we were in the fabric section when my mother-in-law spotted these cute, matching, mother/daughter gingerbread aprons.  Displayed on mannequins for all to see, they were just perfect for Casey and I.  Karen pointed them out to me…suggesting that we really needed to have THOSE Christmas aprons.  I agreed, but didn’t think much of it because the Christmas apron pattern was situated in such a way as to suggest that you had to make the aprons yourself (this is a craft store after all.)  I believe Karen’s response was, “Nonsense,” as she took them off the mannequin and put them in the cart.  We continued our shopping and eventually landed at the check out.

I have to admit that it was pretty funny watching the cashier search the aprons for the price tag, but what was even better was the look on her face when Karen explained how she got the aprons.  I imagine that it’s a pretty rare occurrence when someone takes a sample product off a mannequin and then proceeds to try to purchase it.  The cashier explained that sample items are not for sale…they are SAMPLE items.  Karen wasn’t deterred in the least.  She asked the cashier to get someone from the fabric section to come to the check out stand so we could discuss the purchase of THOSE aprons further.  I’m pretty sure at this point we were holding up the check out line, but still we waited.  Finally, someone came up.  She agreed with the cashier that the aprons were samples and not for sale which led to a conversation about what actually happens to the samples at Hobby Lobby when they are no longer needed.  It was interesting…typically the items are returned to the person who made them, stowed away for display at a later date, or just given away to someone who works at the store.  Karen reiterated that she would like to purchase them as a Christmas gift for me and my daughter…telling about her visit to Kansas from California, my love for baking, and Casey’s fondness for Rachael Ray (but that’s another blog.)  Clearly, Karen had won over the woman from the sewing department and a few seconds later we were exchanging phone numbers and my mother-in-law had arranged for the store to call me (after Christmas) to pick up the aprons when they were no longer needed.  They agreed the aprons could be purchased for $5 each and all I had to do was keep a hold of this little piece of paper until the pick up date arrived.  SCORE!

In the back of my mind, I wondered if they would really call.  I mean, Karen had already returned to California, no money had changed hands at that point, and the note from the store (scrawled on the back of a receipt) hardly seemed like a binding contract.  Yet, there it was…a few days after Christmas…a message on the phone from Hobby Lobby saying that I could come and pick up the aprons from the sewing counter in the store.  Well, Casey and I hot-footed it over there and sure enough, THOSE Christmas aprons were right there waiting.  They were even cuter than I remembered and Casey was so excited!  We proceeded to the check out full of smiles…and then….

The cashier (the same one from our previous visit to the store with Karen,) looked at the aprons and frowned.  FROWNED.  She looked at me said, “You can’t have these.”  I was taken aback as she explained that she couldn’t possibly sell these aprons to me because the sweetest woman from California had come to the store before Christmas and she wanted to buy them for her granddaughter and daughter-in-law.  She repeated the whole encounter to me and I couldn’t help but laugh…which threw her off a bit.  I pulled out the little note and told her that I was with Karen that day.  I wish I could have captured her smile!  She was so delighted that we were going to have THOSE aprons after all!  She said she remembered my mother-in-law very well and although she didn’t recognize me (surprise?) she didn’t think she had the heart to sell them to anybody else after meeting Karen that December day.  Karen had used her “gift” to secure a truly, special gift for Casey and I.

Every year at Christmas time we pull THOSE aprons out–our cookie baking wouldn’t be the same without them!  This year when Casey put hers on we realized just how tiny the apron really is.  Casey is 10 now and while the apron still fits it’s clear to see that she’s not a preschooler any more, but that same sweet smile spreads across her face when she wears it.  THOSE Christmas aprons have become a part of our family’s Christmas tradition and I love to tell the story.

I Can Still Taste the Caramel Apples (aka Why I LOVE Halloween!)

I love traditions…the habits and rituals that create memories (both good and bad, but especially MEANINGFUL) and serve to connect families and friends to the past, present and the future.  Equally as important, I enjoy sharing where, why and how the traditions came about.  So for the last month, my family has endured all of my favorite stories about Halloweens past.  I share these little gems, not just for myself (okay, maybe just for myself) but also as a way to join together my childhood experiences, a little history, some faith/religion and finally…to secretly instill some expectations and wisdom upon my kiddos.  And you thought I just hung out in my kitchen baking cookies all day 🙂

Seriously, I think one of the most effective tools in parenting (and a number of other categories) is the personal testimony.  That’s why I like telling Sean and Casey all about my Halloween adventures–successes and epic fails (age appropriate, of course.)  Everything from what costumes we donned (not ashamed to admit that I was Bat Girl more than once) to trick or treating in the neighborhood to visiting my great grandmother’s house (for peanuts and apples) to haunted houses and everything in between.  We compare and contrast classroom parties, popular candy (then and now), real (and not so real) ghost stories all while asking questions and googling Halloween history.  Together we’ve learned a lot!  And the payoff comes when the kiddos are just as invested in the traditions as I am 🙂

10616209_716894205066418_4160538980628630829_nI would say that I get my love of Halloween from my Dad.  He was the first adult (outside of teachers) that I can remember dressing up for Halloween on a regular basis.  Dad likes his costumes to be scary, and while that’s not my cup of tea, I have many memories of his gory masks and spooky get-ups.  He would help us carve pumpkins and Mom would work on roasting the pumpkin seeds.  At the time, pumpkin patches weren’t a part of our Halloween experience…but we looked forward to the carving nonetheless.  We didn’t use fancy stencils or patterns and our primitive carving tools could have easily sent one of us to the ER (fortunately it never came to that!)  Today, my family looks forward to our annual trip to “the patch” (which my son tells me doesn’t sound quite right) and choosing our own pumpkins from a giant field of orange and green.  Over the years, I have amassed a great deal of pumpkin carving supplies and we make an event out of the whole thing…complete with spooky music courtesy of Pandora.  This year we added hot dogs and s’mores to the occasion.  It’s one of my favorite days of the year (and someday I will master those pumpkin seeds, too!)

The traditions go way beyond the pumpkin patch and the carving.  We decorate the house, reminisce over old Halloween photos and spend countless hours discussing, shopping and creating Halloween costumes.  The costumes have become one of our best-loved parts of the season.  Fortunately, my kids aren’t into scary and with a little imagination and planning, they’ve managed to come up with some pretty creative costumes over the years.  And while I’ve quietly lobbied for the “family” costume, I am afraid that ship has sailed.  For some years, however, I was able to finagle the kiddos into coordinated costumes, but my luck eventually ran out there, too :(.  Oh well.  There’s plenty of fun in sharing stories about past costumes, who we went trick or treating with (family or friends,) where we were living at the time and surprisingly no one ever seems to mention the candy.

Typically we watch “It’s the Great Pumpkin, Charlie Brown” once (sometimes twice) each October and I marvel at the questions the kids come up with.  When they were younger, they needed help with the character’s names and who was related to whom.  Now they ask why Lucy is so mean, how come Charlie Brown can’t get a break, and what Snoopy’s role as the Red Baron is really all about.  This year I had to explain that bobbing for apples was a real thing and we discussed some of the reasons why that tradition didn’t carry on (gross.)  We marvel at Schroeder’s piano playing skills, discuss party invite etiquette and basically feel bad for Linus.

As the children have grown older, Halloween has included a faith dialogue as well.  We talk about the early history of the holiday…a time when pagan superstitions and overall fear fueled the observance.  Picture a people who warily watched the seasons change and anxiously retreated into a time of the year when no crops grew, the weather was particularly harsh and their survival depended upon the work that had been done in the warmer months.  Harvest really was a reason to celebrate as they prepared for months of cold and uncertainty.  Can you imagine how they were compelled to turn to a number of gods for protection and provision?  Warding off evil lent itself to carving scary faces on gourds and trees and displaying these items on their doorsteps.  And what about trick or treating?  A custom that spans ancient beliefs, religious practices and morphed into a “pseudo-war” between the haves and have-nots before becoming the family friendly outing that we now know.

10700574_718765481545957_3257901382160519510_oIt’s November 1st and  costumes lie crumpled up on the floor, candy wrappers dot the tabletops, and tired looking eyes stare up at me.  And while the whole Halloween adventure culminates in one day, I realize that it’s not the holiday itself that means so much to me–it’s actually the whole season.  We’ve been gearing up, preparing for, talking about and making plans for a whole month.  Through it all we’ve carved out special (additional!) time together…outside of mealtimes and the occasional quiet evening.  We’ve cooked and baked together.  We’ve shopped together.  We’ve attended school parties together.  We’ve enjoyed nature together.  And it feels good.  I know these seasons are fleeting.  Before long, their Halloween plans won’t include me.  The kids are growing up so fast and that probably scares me more than any creepy costume on Halloween.  For now I hold onto the imagination and creativity of the season.  I look forward to the cooler temperatures and the rustling of leaves and my mind wanders (unafraid) to the approaching season that seems to draw us closer (even if it only is for warmth 🙂 )  The traditions abound and yes, I can still taste the caramel apples that sweeten this already favored season.

Dear Daughter…Marry a Chef (You’ll Thank Me Later)

When I was a kid, I would tell my mother that I wanted to live in a house without a kitchen.  Actually, if I remember correctly, we had several conversations about it.  I’m fairly certain that I’ve even brought up the subject with a couple of past boyfriends (just to let them know what they were in for—yes, I’m a courteous girl :).)  And my poor husband, he knows all too well how much I LOATHE the kitchen.  Turns out that it’s not really the kitchen that I have a problem with…I mean I always planned to have a microwave and a refrigerator (I’m not stupid.)  What I really hate is the COOKING that takes place in the kitchen!

Maybe my dislike for cooking comes from possessing a very plain and boring palate.  For example…I’m pretty much a beans and rice girl.  When we go out for dinner I typically choose one of three entrees:  cheeseburger, pizza or chicken, and I’m not really into sweets.  There isn’t an adventurous bone in my body when it comes to trying new foods (asparagus anyone?)  And I’m actually very okay with this.  I view eating in the same manner that I see the need for sleep–a mere necessity and nothing more.  I have a hard time relating to a lot of my foodie friends who rave about their latest food find and go on and on about “pairing” this delectable tidbit with that scrumptious delicacy (am I even using those words right?)  I really just don’t get it.

In my own defense, I WANTED to get it.  I wanted to be a so called “expert” in the kitchen.  While I make a mean sandwich, there actually was a time when I secretly aspired to be whiz in the kitchen.  I own a lot of cookbooks, including the elusive Joy of Cooking CD-ROM (lol) and at one point I was absolutely addicted to the Food Network.  Like many stay-at-home moms, Paula Deen, Bobby Flay, Tyler Florence, and Ina Garten (aka the Barefoot Contessa) were not only my idols, but also my best friends.  As soon as it was acceptable for me to turn off Nickelodeon (11am or so) I would quickly click the channel to see what my “friends” were whipping up for lunch and dinner.  Never has anyone been more into “homemade” and “from scratch” as yours truly.  I was rolling out dough, making my own stock, and a regular in the fresh herb section at our local supermarket.  I’m not sure if I crossed the line into “cooking obsessed,” but I’m pretty sure I was right on the edge.  When my three year old daughter started to request tuning into Rachael Ray instead of Dora the Explorer I finally woke up.

To be honest, I was spending a lot of time, energy and money on a hobby that I hated.  Not only did I not enjoy cooking, but truth be told, I was NOT very good at it.  In hindsight, I realize that I was fighting a losing battle.  Don’t get me wrong…I have the utmost respect for foodies and chefs alike.  It just turns out that it’s not my thing.  Slowly, I stopped turning in to the Food Network and filling my time with other things.  I began adhering more to the Sandra Lee method of food prep—“Seventy percent store-bought, ready-made plus 30 percent fresh allows you to take 100 percent of the credit.” Her kitchen motto was all that was left of my so called “love of cooking.”

Needless to say, my family didn’t starve to death.  Not once has any one ever said, “Oh, Anna, how I wish you could go back to making (fill in the blank.)”  While there are few remaining recipes that I rely on all these years later, I don’t really sweat it…especially since my children inherited my same plain and boring palate.  We primarily live on the basics:  a variety of chicken dinners, tacos, spaghetti, LOTS of sandwiches and whatever my husband can grill.  It’s not exciting, but it fills a hole.  What used to make me feel like a failure as a wife and mother, now has crossed over into the realm of acceptance.  I no longer want to be a good cook.  If I could, I honestly would quit cooking altogether and live on cereal. Unfortunately, that is not an option.  Sigh.

So here it is…I am over the mom pressure from the foodie crowd (I couldn’t grow or can anything to save my life.) I will be the first one to shout from the rooftops that being a successful wife, mother, & homemaker doesn’t mean that you are required to be a culinary genius, too.  Just because you stay home with your kids does not mean your worth and value is tied up in what’s for dinner.  Serving chicken nuggets does not make you less of a woman.  I wish someone had told me all of this years ago.  Today, the only chef I pay attention to on the Food Network is Guy Fieri…and that’s because I like to drool over the food (mostly cheeseburgers and barbeque) he samples on “Diners, Drive-Ins and Dives.”  Mmmmm….

I completely understand that no “knight-in-shining-apron” is going to come to my kitchen rescue anytime soon.  Research shows that even in today’s modern society, woman are responsible for nearly 80% of household food prep.  And while a growing number of men are becoming more and more comfortable in the family kitchen, I realize that meals will continue to fall into the woman/wife/mom category for the foreseeable future.  And that’s okay because I’ve already been coaching my daughter to marry a chef.  Problem solved.  (You’re welcome.)

Today’s menu has two choices:  TAKE IT or LEAVE IT!

This morning’s bowl of Cheerios. Yummy!

I like Cheerios.  A lot.  And not just at breakfast time.  I think Cheerios are appropriate for lunch AND dinner, too.  I should also note that I like them with AND without milk.  So, if you are what you eat…then I’m heart healthy and packed with fiber and whole grain goodness!  If only it were that easy.  Truth is, in addition to my love for Cheerios, I really enjoy pizza, chocolate ice cream, nachos and several different brands of potato chips.  I also think these tasty treats qualify as breakfast, lunch and/or dinner.  Gross, huh?  Because now it’s pretty obvious that if you are what you eat (Cheerios aside,) I am junk food—loaded with calories, packed with sodium and in every way possible just a cheesy, greasy mess 😦

I don’t want to be a cheesy, greasy mess.  Who does?  Which is why I’ve carefully chosen the middle of the road where these food cravings are concerned.  It’s called MODERATION.  We’ve all heard the word.  It’s the term that foodies and nutritionists throw around which serves as code for “eat what you want, just not too much.”  Have a small bowl of ice cream, instead of the whole gallon.  Sounds like a good system.  I mean MODERATION allows us to munch on the yummy (yet less than healthy) goodies we desire without any guilt and few consequences, right?  Come on…you didn’t just land on the planet!  You know that while moderation is all well and good, it can (and usually does) come back and bite us in our ever-expanding back ends.  We are human after all…given to temptation and with little (if any) willpower.  Watching what we feed our bodies is tough stuff.  Health and nutrition can be hard to manage.  Time, energy, and money all factor into the equation as well.  Which is why I wish Willie Wonka would perfect that “3 Course Dinner Chewing Gum”  Violet sampled in the movie.  It would really come in handy at my house (sans the exploding blueberry part, of course.)

Clearly, there’s no easy button here.  The same goes for what we feed our soul.  It seems to be a recurring theme lately.  Of course, I’m only speaking for myself, but it feels like everywhere I go that it’s not too hard to decipher one’s soul food diet.  For example, the kid who is cussing up a storm at the baseball diamond is palling around with a tribe of kids cussing up the same storm.  Never mind that there are three-year old ears in close proximity.  Never mind there are grandparents in attendance.  Never mind the fact that we all know your parents and you should know better!  Somehow, somewhere this child has ingested ugly, nasty words and probably without any forethought, has decided to share them with the world.  Look, I’m not the word police.  Sure, I personally find it distasteful, but I understand that it is pretty common in today’s culture.  That being said, I still would appreciate it if there was some consideration for the “audience.”  Comedians, politicians, businessmen/women…most of us know that rule #1 in many parts of the real world is knowing your audience.  Bottom line, if you’re going to swear, don’t share.  Your friend is sitting right next to you and can easily hear you…so shouting your obscenities really isn’t necessary.

Still, the cussing is pretty benign.  When you start adding up all the other foul soul food shares out there…like berating your kids in the store parking lot, trash talking your wife, glamorizing past and current drug use (in front of kiddos no less,) your disdain for the church and religion, your lack of confidence in political leaders, and your basic hate for anyone who doesn’t see life your way…the notion that you are what you eat becomes pretty clear.   Listen, I’m not perfect.  I know life can be hard.  Maybe things haven’t been easy.  Rough family life, a bad marriage, children who try your patience and the list goes on.  There’s plenty of blame to go around. Often we try to excuse our own behavior by insisting that we don’t know any better or fault the way we were raised.  But whether it’s nature or nurture (or a self-labeled  “bad habit”) none of this lets any of us off the hook.  We’re not all privy to the good life.  Understood.  But I think there’s an argument to made for the fact that we all WANT the GOOD LIFE.  We want to be successful and happy, so let’s start making some personal decisions that breed success and happiness.  Decisions that translate into being the absolute best that we can be!  When it comes to good soul food, MODERATION doesn’t seem to amount to much.  In fact, myself included, we need to be visiting that good soul food trough several times a day.  I mean, would it really be terrible to try to attain a little positivity by feeding our soul a few good things?

Nosh on the POSITIVE.  Live better, be better.  Find kind neighbors.  Be a kind neighbor.  Show a genuine interest in your family and friends.    Practice generosity.  Pay it forward.  Feast on GOOD news.  Share your time and talents with others.  Help a stranger.  Say hello.  Hug your children (often, or as often as they’ll let you.)  Sing!  Gorge on HOPE.  Seek out good, honest friends.  Be a good, honest friend.  Affirm others.  Believe in yourself.  Be playful!  Smile (a lot.)   Be an example.  Offer grace.  REPEAT.  With this menu you can go back for seconds and thirds–guilt free.  I truly believe we are all capable of making good choices for ourselves and others.

This is the table that I want to sit at!  And I want others to feel free to pull up a chair.  Let’s invite our spouse, children, family members we get along with (and especially those we don’t) and our neighbors.  Maybe we could all talk it over while enjoying Cheerios (with OR without milk.)  Sounds good, doesn’t it?  So…who’s hungry?

June Bugs in May (A Horror Story)

This will probably only make sense to those who know me best: I HATE June bugs!  I don’t remember when my phobia began, but I’m pretty sure that it’s hereditary since I have early childhood memories of my mom, my aunts, my cousins and my sister shrieking in terror when one would come around on a warm spring/summer night.  By the time I was in junior high, the phobia was in full force…as my good friend, Joy, and I would part ways at the street light halfway between our houses.  Under this light it would seem that June bugs gathered by the thousands…just looking for young girls with long hair to attack.  Of course, we played it cool…walking to the street light, quickly saying our goodbyes and running like maniacs back to our houses screaming all the way!  I think it’s their large bodies, hard shells, sticky limbs, drunken flight patterns and the sheer noisiness of the little beasts that send me into a tizzy.  YUCK!

June bug memeTurns out that up until now, my fear of June bugs was strictly theoretical.  You see all that time I spent dodging them and screaming about them and running from them was merely child’s play.  I had never actually had one land on me.  I’ve never had to pull one from my hair.  Mostly, when I saw one I ran the other direction and if I came across one on the ground well, I stepped on it and tried not to throw up (it’s that body crushing sound that makes me want to hurl.)  This system was my response to these scary critters and while it may not sound like a great plan, it had always worked…that is up until last night….

While sitting around a warm campfire, preparing s’mores on an especially beautiful night I met my fear head on (so to speak, ) but let me back up just a bit–I should probably set this up a little.  My kiddos were having friends over and with all the comings and goings I left the outdoor lights on.  I wanted parents and kids arriving at our house to have a little light…especially since the bulb in the lamp-post that lights the sidewalk had burned out.  This meant the flood light that illuminates the patio and basketball goal was on…for HOURS!  It was during this time that a swarm of June bugs made their way to our house.  There were so many that my son and his friend took to trying to exterminate the problem by clubbing them with sticks (probably a boy thing) and stepping on them.  This was all well and good (or so I thought) because 1.  it gave them something to do while they were waiting for every one to arrive and 2. they were killing the June bugs!  By the time we were ready to get started I foolishly believed that the June bugs were no longer and issue and that any remaining little beasts would simply move on to someone else’s yard once we turned out the lights.  But, NO.

Throughout the campfire we could HEAR the June bugs lurking.  Much of the noise came from June bugs running into the garage wall where the light had once been.  There was even a loud popping noise when the less brilliant bugs sizzled up in the fire–much to the amusement of the kids.  And finally there was the crackling noise of the June bugs beneath MY feet as I moved about helping the kiddos make their s’mores.  Each crunchy moment made me want to lose my dinner and I wasn’t even sure if I was going to be able to stomach eating a s’more myself.  After about 20 minutes my thoughts drifted away from these horrible bugs and on to the silly ghosts stories that were being told.  But wouldn’t you know it…just when I finally got past the situation enough to put together my own ooey gooey, delicious s’more I felt something.  No it wasn’t in my hair or on my arm…no the sinister little beast was crawling up my pant leg–ON THE INSIDE!

So there I was with my marshmallow stick in one hand and my fixin’s in the other when I could feel something moving up my leg (darn those wide leg, boot cut jeans.)  Okay, I thought, be calm…we have company.  We don’t want to panic the children.  I’ll just crush it up against my leg and then it will fall out, right?  (As I type this I can’t believe those words crossed my mind!)  So I quickly transferred everything to one hand and smacked my knee with the other.  I heard and felt the crunch.  I shook out my pant leg, but nothing fell out.  Surely, I had killed the thing!  I mean, I hit it pretty hard.  I shook my pant leg even more, stepping out of my sandal and using the moonlight to search out the area.  NOTHING.  Alright, maybe it fell out and I just didn’t see it.  Yeah, that sounds good.  I’ll go with that.  Thinking that the issue had resolved itself, I went back to the task at hand and set out to assemble my s’more.  As soon as I bit into that little square of goodness that same feeling returned to my leg.  This time I couldn’t help but react.  I jumped, squirmed and announced, “There’s a bug in my pants!”  You can imagine the giggles and fits of laughter.  Great.  So again I smacked my knee as hard as I could and this time I knew without a doubt that I had succeeded in killing that thing.  You can’t deny BUG JUICE! (Excuse me now while I once again try NOT to throw up!)

What I realized last night is that somewhere along the way, I must have grown up.  While I still wholeheartedly claim AND proclaim my June bug phobia–somehow I got through that moment.  In the past a trauma like this would have completely ruined my night, but not this time.  Instead, I shook out my pant leg (again) and what was left of the bug fell out (of course, I immediately stepped on it for good measure.) Then I moved past it.  We finished up our s’mores and Steve and I enjoyed chatting by the fire until nothing was left but smoldering embers.  It was so peaceful.  Obviously, I didn’t want to discover another bug up my leg, but I wasn’t afraid to let my feet rest on the same slab of concrete where the incident occurred.  Call me crazy, but this is BIG GIRL stuff!  I felt so good and proud of myself (especially after that squishy spot dried on my pant leg.)  Sometimes it truly is the little victories…”sometimes you’re the windshield, sometimes you’re the bug”…and sometimes you just get over it and move on as dignified as possible…BUG JUICE and all!

Losing Our Easter Booth (and Our “P.I.G.” Status)

Never, EVER, did I think I would be writing about a midwest BBQ chain and Easter Sunday.  Yet, here I am.  This goes to show two things…first, that the cliché holds true (again):  Never say never.  And second. that convenient, tasty, family style BBQ is perfectly acceptable as a go-to meal for ANY holiday or celebration (and in our family’s case, especially religious ones!)

Easter Lunch 2013

For the past six years we have “dined” at Famous Dave’s on Easter Sunday.  Okay, I know it’s not fine dining.  Yes, I am aware that they are a paper napkin establishment (gasp!) And I understand that French fries are not typical Easter dinner fare.  (Glad we got all that out of the way 🙂 )  Still, I think Famous Dave’s is just as good a place as any to celebrate Jesus’ resurrection.  It’s a Spencer family tradition that’s often met with puzzling looks, stammering comments and even a little pity.  But that’s okay.  We like Famous Dave’s and we especially like the reason we ended up there in the first place (insert sappy background music here….)

In 2009, my husband was called to lead what I will politely label a “broken” church.  You see the pastor had decided to leave our denomination and he additionally took the congregation with him.  For whatever reasons, all that was left were about a dozen people, loads of tech equipment and a lot of questions.  This clearly would not be easy.  And, did I mention this was Steve’s first senior pastor appointment?  Despite the best efforts of many, the prayers of many more and the sheer broken-heartedness of the situation, a decision was made to close down the church.  All of this took place in a matter of weeks.  It was one of the saddest things I have ever witnessed.  So here’s the worst part…the last worship celebration for this now defunct church would be on Easter Sunday.  (I can hardly type these words!)  CLOSING A CHURCH ON EASTER.  (There really should be a law against such a thing!)  I could barely stomach the idea.  I thought of the church members who stayed behind.  Those who wanted to restructure and carry on.  And all those who put their heart and soul into trying to make this church a healthy, functioning place of worship.  But it wasn’t meant to be.

Much work went into that final worship celebration.  First, there was the cleaning.  Since worship would be held in the church’s youth building, couches had to be moved, chairs brought in and EVERYTHING had to be wiped down.  The sound system was reconfigured, light bulbs were replaced and a small room was readied to serve as a nursery.  A sweet woman who had hoped for a different outcome for her church set aside her sorrow and assembled Easter baskets for any children who would arrive on Sunday morning.  With just a few musicians, songs were selected to praise a newly risen King.  My husband crafted a sermon of hope and promise…in the midst of all of the responsibilities of closing a church.  It was a sad and rainy morning.  I felt like God was weeping right along with us.

But if you know how the Easter story ends…then you know that there are no limits to what our Great Creator can do!  As worship came to a close, the sun and the SON broke through!  The rain moved out and although we closed the doors on that final worship celebration, what we didn’t know was that God was already opening another.  It was almost three o’clock in the afternoon when we left the church parking lot that day.  Our children, ages 7 and 4 at the time, were tired and hungry.  In the midst of all that was going on we neglected to make lunch plans…and that’s how we ended up at Famous Dave’s.

The restaurant was practically empty.  The lunch crowd was gone, the wait staff looked spent and here walks in this family of four…dressed in now wrinkled Easter wear, tired and clearly saddened.  We crawled into what would be called our Easter booth…to be honest, while we always sat in a booth on these occasions it wasn’t the same booth every time–and that was okay.  Steve ordered ribs, I ordered the baked potato with chili and the kiddos put in their request for chicken strips and fries.  Then we waited.  Not just for food, but for everything.  We honestly didn’t know where we would land…although we knew it would be another church, most likely in another town.  And yet somehow, in that little booth our spirits lifted.  The children made us laugh and we counted our blessings.  We were together and life was in fact GOOD!  There was safety and warmth in those comfy, red seats.  The little kids’ menus reminded us that at Famous Dave’s we’re all P.I.G.s…Pretty Important Guests!  I liked the thought of that and when the meal arrived, we prayed.  The food tasted extra delicious that day, too–satisfying in a way that I cannot explain.  An afternoon at Famous Dave’s was just what we needed.

Obviously, we kept going back.  Steve was appointed to a new church in a nearby suburb and our Easter lunch plans practically wrote themselves.  After a busy Holy Week and all its activities, we found a sanctuary at the east side’s Famous Dave’s restaurant.  The pig-themed decorations, the fishing signs and decals, and those red colored booths–we loved it all!  I have several photos of our kids in their cute, little Easter outfits posing with their Daddy for our annual Easter pic.  Good times.  Blessed times.  Necessary times…but as you can guess, “the times they are a-changing” (thanks, Bob Dylan.)  Famous Dave’s closed this past fall…and the Spencer family DID NOT find out about it until January 😦

Holy Week has arrived again and the question on everyone’s mind is “where are we going to eat Easter lunch?”  I don’t have any answers.  I have tried to coordinate just how long it will take us to drive to the nearest Famous Dave’s (too long unfortunately.)  I’ve looked into dining at other BBQ establishments.  I’ve tried to sell myself on the idea of having Mexican food on Easter (it’s not working.)  I’ve even thought about preparing and cooking a meal myself (and if you know me, then you know this is a desperate thought!)  The reality is we’ve lost our Easter booth, but we certainly haven’t lost Easter and all its promises.  So tonight as I type this, I still have no clue what we will be doing for lunch.  Somehow, though, I’ve gone past worry and fret to a place of “wait and see.”  Not a flippant, inactive state, but rather an active, hopeful resolve.  My husband and kids are not with me in this place.  They want answers and our P.I.G. status back!  But please, don’t feel bad for us…because I so clearly remember a gray, downcast day not so long ago when the sun and the SON came out.  It’s Easter, everyone, and we KNOW how the story ends.  I’m not sure if the booths will be red, but I know that wherever we end up we’ll be fed (in more ways than one)…and it WILL certainly be good!
